AI Cookbook is an Erasmus+ project that supports adult educators working with migrant learners in developing the knowledge, confidence, and practical skills needed to use Artificial Intelligence (AI) effectively in their teaching. Recognising both the opportunities and concerns surrounding AI in education, the project adopts a unique “cookbook” approach, presenting AI tools and pedagogical strategies as easy-to-follow recipes that educators can adapt to their own learning environments. The project aims to demystify AI, promote a positive and informed mindset towards its use, and demonstrate how technology can enhance, rather than replace, human-centred teaching practices.
The project develops a comprehensive AI Cookbook featuring practical classroom recipes, a methodology for the responsible integration of AI in migrant education, and a curated inventory of AI tools linked to real educational needs. Particular attention is given to inclusion, accessibility, ethics, and cultural sensitivity, ensuring that AI supports learners facing language barriers, diverse educational backgrounds, and integration challenges. By providing step-by-step guidance, examples, and transferable methodologies, AI Cookbook seeks to empower educators to create more personalised, engaging, and effective learning experiences while fostering the responsible adoption of AI across adult education and beyond.
